SMS Bear's Peach Cobbler.....



I just HAD to make this recipe! Why? Because my nickname for DH is Bear!!! Anyway, he loved this peach cobbler. I must confess, I used frozen peaches, and it still turned out great.



I made a mini, one serving size of the cobbler; but made the whole recipe for the topping. I cut out the topping and froze what I didn't use, now I have a cobbler I can put together FAST! I think you could use almost any fruit you have on hand and just add some sugar, cornstarch and spice.

I used fresh peaches, but I think in the future, I'll just use frozen since it sounds so easy! Great job!

I scaled the recipe was back too - I wish I'd thought to make the full biscuit recipe so I'd have them for next time :) Your cobbler looks terrific and I'm glad you enjoyed it!

I almost used frozen peaches, but ended up doing a fresh mango cobbler instead. I'm glad to see how well the frozen worked, for future reference - your cobbler looks great!

I think I would have been happier with some frozen ones as well. There was just something off about the bottled ones I used. Anyway, we really liked the biscuit topping. Your freezing idea is great!

Now saving biscuits by freezing the extra is a fantastic idea! When I used my canned peaches, I took the fruit syrup and froze that in an ice cube tray to use in fruit drinks. Hubby wanted an oj with peach vodka and I dropped in a couple of the peach nectar cubes to keep the drink cold and not delute the flavor. Your brilliant! =) and your single cobbler looks delicious!

You're right, by using frozen peaches it is a fast and easy recipe. Even your uncooked biscuits look good, with little bits of butter mixed through out the dough. Thanks for the great freezer tip!

Your cobbler looks fabulous! You are so clever to bake a reduced portion but make the full recipe of biscuits to have on hand in the freezer. I often do the same, as I'm usually baking for 2, but I never would have thought of freezing the extra biscuits. Now you can switch it up and bake a number of different cobblers with all sorts of fruit fillings throughout the summer!

It's helpful to know that frozen peaches would work - it's still a bit early for peaches so the fresh peaches were quite hard to work with. Thanks for the tip!
