MSCC: Coconut Cupcakes.....


I almost didn't make this recipe, I have a great coconut cupcake recipe so why mess with another?  What changed my mind was the 7 Minute Frosting, I have never made this type of frosting so why not?  Glad I did, the cupcake part was on par with my recipe; great taste with lots of coconut flavor and I love coconut!  I liked the frosting, it piped well and was easy to make; my only complaint was that it was very plain, my DH said everyone at work would have prefered a regular frosting.  All in all they were good, would use this recipe if I lost my favorite recipe but would change the frosting.  Many thanks to Jennifer from Cinema Cupcakes for picking our recipe of the month!

We loved, loved, loved these. Best cupcake EVER! Yours are so cute in those little wrappers...such a nice combination. First time I had made the 7 minute icing as well and I thought it was fairly easy, fun, and good! Maybe too good.

This month’s pick was Coconut Cupcakes from Jennifer at Cinema Cupcakes . If you’ve followed this past month, you know that coconut was also the theme for Cupcake Hero. This is how my glorious coconut rum cupcakes came to be. For MSC, I tried to stay true to Martha’s recipe, but realized I did not have coconut extract or a candy thermometer to make the icing. I ended up making the coconut cupcakes with her cream cheese icing (my favorite!). Hopefully, I get at least half credit this month.
