Blueberry Crumb Cake.....


Our pick of the week was Blueberry Crumb Cake by Sihan of Befuddlement. This was a VERY good coffee cake and I could have eaten the whole batch myself...but I didn't, I left that to my DH. Easy recipe and instead of an 8 x 8 pan, I used my jumbo (Texas) muffin pan because I was planning on sending the left overs to work with DH, ha ha ha! I had him taste test one of the muffins and he said, "Holy sh** these are good". These had a great crumb topping, I doubled the crumb recipe, because you can never have enough crumb topping. I was packaging the rest of the muffins so DH could take them to work and he asked, "What are you doing? Those are staying right here!". I had one and the rest are history, LOL. Verdict, I would definitely make these again, a total winner. Apologies for the picture, my camera and I are having issues.

It's no fun having issues with your camera. But at least you didn't have any issues with the coffeecake! Doubling the crumbs sounds delicious.

Big little cakelets. Love the Texas muffin size. Not too big, but big enough to make sure you get your fill. They look really good.

I think that's a good size for these - I wouldn't be able to stop at one normal sized one :)
