This weeks pick, French Yogurt Cake with Marmalade Glaze, was by Lilana of My Cookbook Addiction and what a great recipe!!! The recipe went together easily; the only problem I had was finding Lemon Marmalade, which I never found. My mom always had Lemon, Lime and Orange Marmalade on hand; I had no idea marmalade had become an endangered condiment. So after going to four markets, Trader Joe's and Cost Plus, I decided to use Orange Marmalade, and adjust the recipe accordingly. I used my new shortcake pan which makes individual cakes with an indent on the top; this pan worked out well and the cakes released perfectly!
The only change I made was with the glaze, I diluted the orange marmalade with Gran Marnier (about 3 tablespoons) instead of water. These mini cakes were very good, I made Madeleines with the leftover batter and devoured them as soon as they cooled. The finished cakes were topped with Greek Yogurt and berries, yummy!!! Verdict, will make again, a versatile cake that can be used in different forms.
