The Sweet Melissa Sundays recipe for this week was chosen by Katie of Katiecakes, check out her blog, she has some great recipes! Ginger is another flavor I love, not as much as lemon of course, but it's right up there. I also made my TWD recipe and was surprised to see many of the same spices were used, so it was very easy to put them both together and bake, same temperature. Other than the Guinness stout, I had everything on hand; the recipe used 2/3 of a cup of the Guinness and the rest was consumed while the gingerbread baked; wouldn't want to waste anything!!!
The bread smelled so good while baking, DH kept hoovering by the oven, waiting for it to come out; I reminded him it needed to cool a bit.
After tasting the gingerbread it was a bit disappointing, not very gingery; and I added crystalized ginger to the batter. DH, AGAIN, did not like the bits of ginger in the bread, I see a pattern here, no bits of anything larger than 1/8" from now on. Who knew, after 23 years of marriage, he didn't like bits, LOL; will strain his food from now on. The ice cream I used was a Haagen-Daz new flavor called Brown Sugar, yummy!!! This new ice cream line is called 5 because they only use 5 ingredients, it's really good; they have a ginger flavored one also.

Your gingerbread looks wonderful! Sorry it wasn't your favorite but I bet you could spice it up a bit next time. I've heard wonderful things about that ice cream. I need to find it and give it a try!
Straining your hubby's food had me laughing. I had to tell you that I think it is fantastic to see you are a personal trainer. Both my parents are personal trainers and out of guilt, I have a personal trainer to kick my butt after I get done with work...which is being a commercial electrician...very physical labor.
Love the gingerbread and ice cream on top. I am still trying to lose 6 pounds to keep piece at the gym so I will try Brown Sugar ice cream a little later =D. Thank you for the welcome!
Mmm, brown sugar ice cream would taste fantastic with this! Sorry you didn't like the gingerbread on its own.
Your gingerbread looks fantastic! I'm with you on the ginger flavor: the more the better. I added grated fresh ginber to mine. How great is that Haagen-Daz brown sugar ice cream? We love it here!
YOur gingerbread looks fantastic.
Brown sugar ice cream?! I'll have to try it.
Ha ha - I have to laugh about straining your husbands food. My husband can't stand ginger - but I love it!
Too bad I missed this one - I'll definitely make it up once the cool weather hits!
Love the mini! ...as they say, the best tings often come in the smallest packages!!!
P.s.: Hope you are finding a bit of time to relax through your training! Oh! ...and in case I forget: BREAK A LEG!
Your gingerbread looks so pretty. I agree, it was a bit bland for me too :)

I agree, not gingery enough... but yours looks delicious!
Looks great with that ice cream!
Ooh that ice-cream sounds good! Your gingerbread looks great too! Hx
I bet the ice cream was the perfect topper - looks delicious!
How funny about your husband! I just finally realized that my husband doesn't like sauce! Of any kind! Aren't men funny?!
Well it sure looks good. Sorry it wasn't a slam dunk for ya, I did think it could use a little more kick.
Well, I bet the brown sugar ice cream made everything better :) YUM! I'm only sorry that the flavor of the gingerbread wasn't strong enough for you. Your husband sounds like a hoot. I could see how crystallized ginger might scare the unsuspecting taste tester :) Sorry that I've been an absent commenter; I just finished up my law school exams and am finally getting around to my google reader.
Love the round shape of your gingerbread. Yum, brown sugar and gingerbread. Will have to try this recipe and maybe reconsider subbing ginger ale for the guinness.
Thanks for the bday wishes :o)
