Fresh Mango Bread.....


Easy and fast recipe, many thanks to Kelly of Baking with the Boys for our weekly recipe pick! No problems with the mango they are on sale here, 2 for a dollar; mine were the perfect ripeness, just firm and no strings. I decided on eliminating the raisins and added about 3/4 cup flaked coconut; I also used coconut flour for a 1/2 cup of the flour. I like the moistness of the cake but the mango flavor was missing, I just couldn't taste the fruit. Maybe not use the cinnamon and see if that change helps improve the mango flavor or change the recipe to pineapple, now that sounds good. A very adaptable recipe that you can change to suit your own tastes. Check out the other bakers at TWD and see how their bread came out.

I agree... the mango wasn't very prominent. Your bread looks great, though!

Your bread looks really tasty! And mangoes at 2 for $1, what a deal! I didn't get much mango flavor either, next time I'll try with bigger chunks of mangoes.

I've never heard of mango bread before, it sounds wonderful!

There is a store by my house that has mango's on sale all the time!

I love coconut flour! It's so healthy, and I just love the texture it imparts to baked goods. Not to mention, the stuff smells amazing! Your mango bread looks fabulous!

The mango was an illusion of flavor, but i loved the little yellow chunks in the bread and it is a great spicy loaf. Your loaf looks yummy!
