Fresh ginger and Chocolate Gingerbread.....

DH and I really like ginger, in all forms; I put fresh ginger in my green tea, mmmmmm. So a big thank you to Heather of Sherry Trifle for a great choice. Anyway this gingerbread did not disappoint, I added candied ginger because I couldn't find stem ginger; and I went to the huge 99 Ranch Market that carries everything Asian, you would be surprised what they have! I'm not too sure what they do with some of the interesting things they carry, LOL. I'm not a huge chocolate fan, I know wierd, so I did not add it to the cake batter. I used my Mary Ann pan and should have baked it 5 minutes longer. The icing was very good, I didn't have any coffee, so I used some espresso powder mixed with water. Dorie suggested a bit of creme fraiche would go well with this bread. I really liked it with the creme fraiche but DH didn't care for it very much. I haven't cut into mine yet...so I have no idea how I will like it. It smelled awesome while baking and the frosting IS good (of course I swiped a taste from the spatula after I was done frosting the cake!). I'm taking mine into work....we will see how well received it is. Ginger isn't a favorite but I work with a large ethnic variety of people and who knows, it may be gone in a heartbeat! lol I'm glad you liked it!

What a great idea to use that pan -- it makes the gingerbread look even more festive and it's got a readymade place for the creme fraiche:)

Dorie Dorie Dorie. how fun is that? Glad she liked it too. That's always special. Yours does look pretty. I love ginger as well. If you go to the Q & P there is a link for ordering online the stem ginger. I couldn't find either. I live in a mid sized town so, no surprise.
I think its probably good with or w/o chocolate.
