Blueberry Crumb Cake.....


Our pick of the week was Blueberry Crumb Cake by Sihan of Befuddlement. This was a VERY good coffee cake and I could have eaten the whole batch myself...but I didn't, I left that to my DH. Easy recipe and instead of an 8 x 8 pan, I used my jumbo (Texas) muffin pan because I was planning on sending the left overs to work with DH, ha ha ha! I had him taste test one of the muffins and he said, "Holy sh** these are good". These had a great crumb topping, I doubled the crumb recipe, because you can never have enough crumb topping. I was packaging the rest of the muffins so DH could take them to work and he asked, "What are you doing? Those are staying right here!". I had one and the rest are history, LOL. Verdict, I would definitely make these again, a total winner. Apologies for the picture, my camera and I are having issues.

French Yogurt Cake.....


This weeks pick, French Yogurt Cake with Marmalade Glaze, was by Lilana of My Cookbook Addiction and what a great recipe!!! The recipe went together easily; the only problem I had was finding Lemon Marmalade, which I never found. My mom always had Lemon, Lime and Orange Marmalade on hand; I had no idea marmalade had become an endangered condiment. So after going to four markets, Trader Joe's and Cost Plus, I decided to use Orange Marmalade, and adjust the recipe accordingly. I used my new shortcake pan which makes individual cakes with an indent on the top; this pan worked out well and the cakes released perfectly!

The only change I made was with the glaze, I diluted the orange marmalade with Gran Marnier (about 3 tablespoons) instead of water. These mini cakes were very good, I made Madeleines with the leftover batter and devoured them as soon as they cooled. The finished cakes were topped with Greek Yogurt and berries, yummy!!! Verdict, will make again, a versatile cake that can be used in different forms.

Lemon Cup Custard.....

This weeks recipe was chosen by Bridget of The Way the Cookie Crumbles. I did a half recipe because there are only two of us and I have a bodybuilding show in three weeks, eek! I love lemons, we have a tree out back, it's just not the right time of year for home grown fruit. This recipe used very few ingredients, just four, and was easy to assemble. My custards cooked much faster than indicated and looked so good. While the custards were chilling I read the Q&A's on this recipe and was disappointed at how many indicated it was VERY eggy; not what I was expecting. Also, several had said the custard did not have much flavor; I was happy I misread the recipe and had used the zest of a whole lemon, plus I used lemon oil. Well DH was looking forward to the lemon custard and couldn't wait until had finished the pictures to have a taste; he took one bite, said it was awful and gave it to me to try. I took a bite, thought of my mom's EGGY custard (which I hated) and threw the rest of the custards in the sink. Needed more lemon flavor or something. I guess I am more of a lemon curd type of person, oh well, you can't like everything!!!
This is all my DH would eat, and that's just not like him!!! Looking forward to next weeks French Yogurt Cake with Marmalade Glaze.

Passed on the Armagnac Cake.....

Last weekend the Daring Bakers challenge, Flourless Chocolate Cake with homemade ice cream, was due so that is the cake I made, see post below. There are only two of us here and we didn't need another cake to consume. I will make the Armagnac Cake another time and will check other TWDers to see how they liked the cake. This weeks recipe was picked by Lyb of And Then I do the Dishes and I am sure she picked a great one!
